The way we make it
Picked early while the olives are still green. Harvesting is by hand and without any mechanical means. Milled and cold extracted on the day of harvest. Stored under a nitrogen blanket until bottled.
Why We Named It Mairoula's Selection
We gave it the nickname of our mother, Mary. Mairoula is a name her late father used to affectionately call her. Mary is an instrumental member of our family business. She spends the weekends promoting our products and educating people on olive oil and olives.
