The way it tastes
Robust with “medium intense” level of grassy aroma, mildly bitter and pungent.
The way we make it
Picked in late November to mid December. Monocultivar, produced from small size green olives of Koroneiki. Harvesting is by hand and without any mechanical means. Milled and cold extracted on the day of harvest. Stored under a nitrogen blanket until bottled.
Why we named it Calypso
We named it after our grandmother (Greek: Yia Yia) Calypso, the matriarch of our family. Yia Yia Calypso was always the first to test the new production and give her approval (and disapproval) of the new harvest. She was to all of us a person of authority.
